Autumn Shining
October is here and this week in the restaurant we’ve launched a new menu to reflect the season.
One of the many stars is the Maultaschen soup starter, Autumn on a plate. These handmade German-style ravioli are filled with a mixture of fresh, seasonal mushrooms from Brandenburg, as well as onions, juniper berries, marjoram, parsley and pepper. With the plate there’s a light, aromatic stock to be poured over it, made from soaking dried mushrooms with comforting herbs such as thyme, spices and ground porcini to add even more umami. The dish is garnished with celery and raw forest maronen & portobello mushrooms. Another Autumnal starter is the spiced pear salad with radicchio, truffle and gingerbread that snaps like dried leaves underfoot.
Game season has arrived. For meat & mains, there’s wild venison (hirshe) served with beetroot and walnut and in the coming weeks the wild duck and pigeon will arrive for our daily specials. Our vegan and vegetarian main courses will be changed soon too and will feature those backbones of eating in the cooler months, the root vegetable.
As well as Tiramisu made from our booze and Kochere coffee beans, there’s poached pear in the deserts, done with spices, bay leaves and served with homemade ice cream, smoked apple and a seed crumble. It’s clear, delicate and melting, like an early frosty morning in an orchard as the sun begins to warm the boughs.
